Jesus wants me for a Sunbeam Guitar!
My brother Joseph is a super gifted artist. He loves making stain glass and mosaics. He recently made a mosaic guitar for one of his friends. I told him that I would love for him to make one for me. He picked out the theme "Jesus wants me for a sunbeam" and this is what he's done with it so far! I love it! I'll post more pictures as he sends them!

Pork Chops Ole
6 loin pork chops, trimmed
Salt-free herb seasoning blend and pepper to taste
3/4 c. uncooked long grain rice
1 1/2 c. water
1 can (8 oz) tomato sauce
2 Tbsp. Taco seasoning
1 med. green pepper, chopped
1/2 c. cheese (I used mozarella b/c it has fewer calories)
In a LRG skillet coated with nonstick cooking spray, brown pork chops; sprinkle with seasoning blend and pepper. Meanwhile, in a 13 in x 9 in x 2 in baking dish coated with nonstick cooking spray, combine rice, water, tomato sauce, and taco seasoning; mix well. Sprinkle with chopped green pepper. Arrange pork chops on top. Cover and bake at 350 for 1 1/2 hours. Uncover and sprinkle with cheese; return to oven until cheese is melted!
Serves 6, (1 pork chop, 1/2 c. rice = 5 Weight watchers points)
Recipe is courtesy of my Mom. The kids and Jesse gobbled it up.
